Egg White Bites

Egg White Bites are loaded with cheese, bacon, and green onion for the ultimate on the go breakfast!

Ingredients

  • egg liquid, 2 ½ cups, whites only
  • cottage cheese I use 2%, 2/3 cup
  • Bacon cooked, chopped, 1/2 cup
  • green onion chopped, 1/4 cup
  • Colby-Jack cheese shredded, 1/2 cup
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with non-stick spray. Set aside. 
  2. Pour the egg whites into a large mixing bowl. Whisk in the cottage cheese, bacon, and green onion. Divide the egg mixture evenly among the 12 prepared muffin cups.
  3. Sprinkle the top of each egg cup with salt and pepper. Sprinkle the cheese evenly over all the tops. 
  4. Bake uncovered for 25 minutes or until the eggs are set. Carefully remove the pan from the oven. Let the egg bites rest and cool slightly. Serve warm and enjoy!
