Egg White Quiche

This delicious egg white quiche is made with cottage cheese, mixed vegetables, turkey bacon and cheese. It's easy to make and the perfect breakfast recipe to meal prep.

Ingredients

  • 1 inch pie crust I used Wholly Wholesome, frozen
  • 2 cups egg 16 oz carton, white, liquid form
  • ½ cup cottage cheese
  • 1 cup vegetables I did ½ cup broccoli, ⅓ cup red pepper and ⅛ cup white onion, finely chopped, mixed
  • ½ cup cheese such as mozzarella, cheddar or feta, shredded, low-fat
  • 4 lices turkey bacon chopped, cooked
  • ¼ cup fresh herbs such as parsley, basil, or chives, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Blind bake pie crust according to package instructions then preheat oven to 375°F.
  2. In a mixing bowl, combine the liquid egg whites and cottage cheese. Use an immersion blender to blend or blend with your regular blender.
  3. Add chopped vegetables, shredded cheese chopped fresh herbs, salt, and black pepper to the egg white cottage cheese mixture. Mix well to combine.
  4. Pour the egg white mixture into the prepared quiche dish, spreading it out evenly.
  5. Place the quiche dish in the preheated oven and bake for 45-55 minutes, or until the quiche is set and the edges are golden brown.
  6. Once cooked, remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
  7. Garnish with additional fresh herbs, if desired, and serve warm.

Notes

  • Pie Crust – use a gluten-free pie crust to make this quiche gluten-free.
  • Egg Whites – if you prefer whole eggs, you can use 5-6 large eggs instead of liquid egg whites.
  • Turkey Bacon – replace turkey bacon with regular bacon, ham, or a plant-based bacon for a vegetarian version.
