Eggless Chocolate Chip Muffins in Air Fryer

Ingredients

  • ¾ cup sugar can increase it
  • 1 cup gluten free flour I have used millet flour
  • 1 tablespoon chocolate chips can use cocoa powder along with it
  • ½ cup oil
  • 1 tsp cinnamon powder can use cardamom powder
  • ½ teaspoon black salt
  • ½ teaspoon baking powder
  • 1 teaspoon lemon juice
  • ¾ cup soy milk

  1. In a bowl, combine gluten-free millet flour, baking soda, chocolate chips, cinnamon spice, and black salt. Set this mixture aside. Add lemon juice to milk and keep it aside. It will curdle up and there is nothing to worry about it.
  2. In another bowl, mix together white sugar, refined oil, soy milk until the sugar is fully dissolved.
  3. Mix gently the dry and wet ingredients. Add more milk if needed to make a smooth mixture. Pre heat the air fryer for about 10 minutes at 190°C while you are prepping.
  4. Transfer it to paper cups and fill till ¾ th capacity so that they have enough space to rise. Air fry the muffins at 190°C for about 12-15 minutes. Check for doneness by inserting a toothpick in the center; if it comes out clean, the muffins are ready.
  5. Team the soft and decadent eggless chocolate chip muffins with a cup of tea or coffee.

Notes

  • Mix the dry ingredients separately and the wet ingredients separately before combining them. Be sure to mix the batter well but avoid overmixing, as it can result in dense muffins.
  • Use a silicone muffin mold to prevent sticking and for easy removal from the air fryer. I have used steel bowls and greased them before placing muffin paper mould. They fit nicely in my air fryer.
  • Preheat the air fryer for even cooking and to achieve a nice rise on the muffins.
  • Always add dry ingredients to wet ingredients.
  • Check the muffins a few minutes before the timer ends; air fryer cooking times can vary.
  • Let the muffins cool in the mold for a few minutes before removing to avoid crumbling.
