Eggless French Toast
No eggs? No problem! This bodacious brunch is succulent and satisfying without the eggs.
Ingredients
- 3/4 cup almond milk or any preferred milk
- 1 teaspoon granulated sugar
- 2 tablespoons cornstarch
- 1 1/4 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 4 lices bread thick
- butter as needed, unsalted
- maple syrup for serving
- Fresh fruit for serving
Instructions
- Whisk together milk, sugar, cornstarch, vanilla extract, and cinnamon until there are no lumps. Transfer to a shallow dish.
- Dunk each slice of bread into the mixture before any cornstarch settles at the bottom of the dish. Dip the slices for a few seconds, being careful not to oversoak them.
- Heat a nonstick skillet over medium heat and melt butter to coat the pan. Place the soaked bread slices on the skillet and cook for about 4 minutes per side or until golden brown.
- Serve the French toast immediately. Top with fresh fruit and maple syrup when serving.
