Eggnog Muffins

Easy Eggnog Muffins are a holiday breakfast sweet enough for dessert! Melt-in-your-mouth muffin flavored with vanilla, cinnamon, nutmeg, and a cup of eggnog.

Ingredients

  • 1/2 cup butter , softened
  • 1 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup eggnog
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners.
  2. Add butter and sugar to your stand mixer on medium speed until light and fluffy, about 2 minutes.
  3. Lower the speed to the lowest setting and add the vegetable oil, eggs, eggnog and vanilla extract until smooth.
  4. Sift together the flour, baking powder, salt, nutmeg, and cinnamon.
  5. Add to the stand mixer on lowest speed setting until just combined.
  6. Fill muffin cups 2/3 full and bake for 18-20 minutes, or until a toothpick comes out clean.
