Ingredients

  • 1 cup butter room temperature
  • 1 cup sugar room temperature
  • 4 extra-large egg
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ¾ cup milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp nutmeg
  • 2 tbsp rum (alternatively use ½ tsp rum essence)
For the icing
  • ½ cup powdered sugar aka icing sugar
  • 2-3 tbsp milk
  • 2 tsp butter melted

Instructions

  1. Preheat the oven to 180°C/350°F. Grease and line a standard loaf pan with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Scrape down the bowl and mix again.
  4. Sift together the dry ingredients and pour the vanilla extract and rum into the milk. .
  5. Add the dry ingredients and milk, alternating between the two until the batter is smooth and creamy.
  6. Transfer the batter to the prepared loaf pan and place in the oven.
  7. Allow to bake for 20-25 minutes until a toothpick inserted comes out clean.
  8. Remove from the oven and allow to cool.
  9. Mix together the icing ingredients then pour over the cooled cake.
  10. Allow to set for 5 minutes then serve.
