Elote Dip
Move over, salsa—Elote Dip is your tortilla chips' new best friend!
Ingredients
- 1 tablespoon olive oil
- 4 cups corn kernels fresh or frozen (thawed, if frozen)
- 1/4 cup yogurt plain, Greek
- 1/4 cup mayonnaise
- 1/2 cup feta cheese crumbled, or Cotija cheese
- 2 tablespoons cilantro finely chopped, fresh
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1 clove garlic minced
- salt to taste, freshly ground
- black pepper to taste, freshly ground
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add corn and cook, stirring occasionally, until corn is golden and begins to char, about 7-10 minutes.
- In a large bowl, combine the Greek yogurt, mayonnaise, feta or Cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and minced garlic. Mix until well combined.
- Add the cooked corn to the yogurt mixture and stir to combine. Season with salt and pepper to taste. Serve warm or at room temperature with tortilla chips for dipping.
