Elote Loco

Elote loco ("crazy corn") is a whole cob of sweet corn boiled or grilled, topped with mayonnaise, mustard, salsa negra, ketchup and cheese, present at most festivities in El Salvador.

Ingredients

  • 4 ears sweet corn (yellow or white)
  • hard cheese (queso duro blando), grated
  • mayonnaise
  • Salsa negra (or salsa inglesa, Worcestershire sauce)
  • ketchup
  • mustard

  • 4 wooden sticks

Instructions

  1. Peel the corn on the cob and remove the silks.
  2. Fill a large pot with plenty of water and bring it to a boil.
  3. When the water begins to boil, add the corn on the cob.
  4. Cook, covered, for about 15 minutes over medium heat.
  5. Drain the corn on the cob.
  6. Using a sharp knife, cut a hole in the bottom of the corn.
  7. Insert a wood stick that will serve as a base to hold the ear of corn.
  8. Using a spatula, brush or large knife, spread mayonnaise over the entire surface of the ear.
  9. Cover with grated cheese.
  10. Add mustard, salsa negra and ketchup to taste.
  11. Enjoy hot.
