Empanadas
Warm, inviting Empanadas are the perfect dish for any get-together.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup butter cold and cubed, unsalted
- 1 egg large
- 3/4 cup water cold
- 2 tablespoons olive oil
- 1 onion diced, medium
- 1 pound ground beef
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 cup tomato paste
- 1/4 cup peas frozen
- 1/4 cup green onion chopped
- 1/4 cup parsley chopped, fresh
Instructions
- In a food processor, combine flour, salt, and cold cubed butter. Pulse until the mixture resembles coarse crumbs.
- Add the egg and cold water to the food processor. Pulse just until a dough ball forms.
- Remove the dough, form into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Heat olive oil in a skillet over medium heat. Add onion and cook until translucent. Add ground beef, chili powder, paprika, and cumin. Cook until beef is browned. Stir in tomato paste, frozen peas, green onions, and parsley. Remove from heat and let cool.
- Roll out the chilled dough to 1/4 inch thickness. Cut into circles. Place a spoonful of filling on each circle, fold in half, and crimp edges with a fork to seal.
- Preheat oven to 375°F. Place empanadas on a baking sheet lined with parchment paper. Bake for 20 minutes or until golden brown.
