Enchilada Meatballs
Enchilada Meatballs combine seasoned ground beef meatballs with red enchilada sauce and melted cheddar or Mexican blend cheese. These baked meatballs are tender and flavorful, coated in a rich, mildly spicy sauce. They offer an easy way to enjoy southwestern flavors in a single dish, suitable for family dinners or casual gatherings. Garnishes like cilantro, Pico de Gallo, and sour cream add fresh, bright elements to balance the hearty meatballs.
Ingredients
- 2 pounds ground beef lean
- 1 onion finely diced
- 1/4 cup milk
- 1 cup breadcrumbs
- 2 egg large
- 1 tablespoon Worcestershire sauce
- 3 tablespoons taco seasoning (1 packet)
- 19 ounce enchilada sauce one can, canned, red
- 1 cup cheddar cheese or mexican blend, shredded sharp

Instructions
- Preheat oven to 350˚F.
- In a large bowl, combine the ground beef, onion, milk, bread crumbs, egg, worcestershire sauce, and taco seasoning.Use your hands to work the mixture until everything is completely, and evenly combined.
- Roll the meat mixture into 1.5 inch meatballs. It should make 24-26 meatballs.
- Pour 1/4 cup of the enchilada sauce into the bottom of a large casserole dish. Arrange the meatballs in the dish, then pour the remaining enchilada sauce over the meatballs. Sprinkle cheese over the top.
- Bake for 40-50 minutes or until the edges are bubbly and the meatballs are cooked through to 165˚F internal temperature.
- Top with your choice of garnish and serve warm.
