Ingredients

  • 6 English muffins, cut in half
  • ¾ cup pizza sauce, store bought or homemade sauce
  • 3 cups shredded Mozzarella cheese
  • 1 teaspoon pizza seasoning
  • ½ cup mini pepperonis

Instructions

    Cup of Yum
  1. Preheat oven to 375°F.
  2. While oven is preheating, make sure muffins are sliced and toast in the toaster for a minute or so. This makes sure the pizza stays more crunchy and doesn't get too soggy.
  3. After it's done toasting, add about ⅛ cup of sauce to each muffin. Then, top with ½ cup shredded cheese, a sprinkle of pizza seasoning, and mini pepperonis.
  4. Bake for 10 minutes or so or until all cheese is melted and bubbly. Serve warm.

Notes

  • Freezable for an easy snack. Place cooled pizzas on a baking sheet and freeze. Once the mini pizzas are frozen, transfer them to a freezer-safe airtight container or freezer bag. Freeze for up to 2 months. Heat from frozen using the microwave or toaster oven. To reheat in the oven, preheat the oven to 425°F and heat until warm, about 8-10 minutes.
  • STORE leftovers in an airtight container in the refrigerator for about 5 days. Reheat in the microwave, toaster oven, or oven.
