Ensalada de Coditos (Mexican Macaroni Salad)

Ingredients

  • 8 oz macaroni noodles
  • 1 roasted red bell pepper
  • 2 stalks of celery,
  • 2 cups diced ham
  • ½ cup sour cream
  • ½ cup mayo
  • 1 tablespoon yellow mustard
  • salt and pepper to taste

Instructions

  1. Boil the noodles following the package directions until al dente, being sure not to overcook.
  2. Drain and rinse with cold water. Set aside to cool.
  3. Once cool, place the noodles in a mixing bowl.
  4. Add the ham, roasted peppers, and celery.
  5. In a separate bowl, mix the sour cream, mayo and mustard.
  6. Pour the dressing over the ingredients.
  7. Mix thoroughly to ensure everything is coated with the dressing.
  8. Season with salt and pepper.
