Evaporated Milk Recipe

  • 3 1/2 cups whole milk

  1. Pour the whole milk into a heavy-bottomed saucepan and bring it to a simmer over medium heat.
  2. Once simmering, reduce the heat to medium-low and let it gently simmer for about 35 to 45 minutes, stirring occasionally to prevent scorching. Do not let it come to a boil.
  3. After the milk has reduced by about half, remove from heat and let it cool. Strain through a sieve to remove any film and store in a covered container in the refrigerator.
