Ingredients

  • 5 large everything bagels, cut into ½ to 1-inch cubes, about 6 cups
  • 1 pound breakfast sausage, cooked and crumbled
  • 8 ounces cream cheese
  • ⅔ cup whole milk
  • 8 large eggs
  • 3 tablespoons everything bagel seasoning, plus more for topping
  • 2 cups Gruyere cheese, shredded
  • sliced green onions for garnish

Instructions

    Cup of Yum
  1. Preheat the oven to 375 degrees and spread the cut-up 5 large everything bagels, on a parchment-lined baking sheet.
  2. Toast the bagels in the oven for about 8 minutes, stirring them around about halfway through. Once dry and toasty, remove them from the oven and let the bagel pieces cool completely.
  3. While the bagels cool, heat 8 ounces cream cheese in a large bowl in the microwave for 20-30 seconds until it is very soft. Use a hand mixer to beat the cream cheese until it is smooth. Slowly mix in ⅔ cup whole milk and 3 tablespoons everything bagel seasoning,. Whisk the mixture until very smooth and creamy.
  4. Whisk in 8 large eggs and stir in the shredded 2 cups gruyère cheese,.
  5. Once the bagel pieces are fully cooled, add them to a bowl with the cooked 1 pound breakfast sausage, and the egg mixture. Toss together until fully combined. Cover and set aside to soak for 15-20 minutes.
  6. Meanwhile, preheat the oven to 350 degrees Fahrenheit and spray a 4-quart baking dish with pan spray.
  7. After the mixture has soaked transfer it to the prepared dish and sprinkle the top with additional everything bagel seasoning. Bake for 30-35 minutes or until a knife comes out clean from the center and it doesn’t jiggle when you shake it gently.
  8. Let the casserole sit for 5 minutes before adding sliced green onions for garnish and serving.
