Ingredients
- 8 large eggs
- 2 cups whole milk
- 1/2 teaspoon coarse ground black pepper
- 4 bagels , (stale) chopped
- 1/4 red onion , chopped
- 3 tablespoons everything Bagel seasoning , divided
- 8 ounces cream cheese , cubed (24 cubes)
- 1 cup grape tomatoes , quartered
Instructions
- Preheat oven to 350 degrees and spray an 8x10 baking dish with vegetable oil spray.
- In a large bowl whisk the eggs, milk and pepper together until smooth.
- Add in bagels and red onion and 2 tablespoons of the everything bagel seasoning.
- Toss gently to combine.
- Add half the mixture to the baking dish and dot with half the cream cheese.
- Add the remaining bagel mixture to the pan and dot with the remaining cream cheese.
- Sprinkle over the remaining 1 tablespoon of everything bagel seasoning.
- Bake for 40-45 minutes or until golden brown and egg custard is set.
- Top with chopped tomatoes to serve.
- Optional - serve with lox.
