Everything Bagel Pigs in a Blanket

Ingredients

  • 800 g (28oz) puff pastry I use 400g frozen puff pastry rolls which I allow to thaw overnight in the fridge.
  • 800 g (28oz) cocktail sausages
  • 4 tbsp Dijon mustard (Optional)
  • 2 eggs beaten
  • 4 tbsp everything Bagel seasoning

Instructions

  1. Preheat the oven to 180°C/350°F and line two baking sheets with parchment paper.
  2. Roll each thawed puff pastry out on a lightly floured surface to approximately ½cm thick. Cut each sheet of pastry into 16 even squares. 
  3. Brush each piece of pastry with Dijon mustard (if using) then top with a cocktail sausage.
  4. Roll to encase the sausage with pastry.
  5. Place on a baking sheet lined with parchment paper.
  6. Brush with beaten egg and sprinkle generously with Everything Bagel seasoning. 
  7. Place the pigs in a blanket in the oven and allow to bake for 15-20 minutes until the pastry is golden brown and puffed.
  8. Remove from the oven, allow to rest for 10 minutes then serve.
