Ingredients
- 2 tablespoons unsalted butter
- 1 medium green chili pepper chopped, seeded if desired
- 2 cloves garlic finely chopped
- 2 cans 15-oz. whole-kernel corn drained
- 2 cups 8 oz. cream cheese
- 3/4 cup shredded Mozzarella cheese
- 3/4 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/3 teaspoon ground black pepper
- 1/2 cup bread crumbs
- 1/2 cup thyme, sage or parsley finely chopped
Instructions
- Preheat the oven to 375°F (190°C). Melt the butter in a skillet over medium heat. Add the chopped green chili pepper and garlic, and stir-fry for 3 to 5 minutes, until fragrant. Season with salt and ground black pepper to taste.
- Pour the corn mixture into a butter-greased 9x13-inch (23x33 cm) baking dish, and smooth the surface evenly with a spatula. Top with breadcrumbs, the remaining shredded mozzarella cheese, and freshly chopped herbs.

- Whether you use fresh, frozen, or canned corn, the result is a harmonious blend of corn's natural sweetness and the luxurious embrace of cheese. If using fresh corn, cut approximately 6 cups of corn from the cob.
- For cheese options, you may choose any cheese that melts well. For example, parmesan cheese, Monterey jack, pepper jack, or even a mix and match of various cheeses to create a rich and unique flavor for the dish.
- You may always adjust the heat of this dish by adding more or less green chili peppers.
