Ingredients

  • 1/2 cup quinoa
  • 2 cups mixed greens like spinach or arugula
  • 16 falafel balls
  • 1 cup cherry tomato halved
  • 1 cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup hummus
  • 1/4 cup tahini sauce
  • lemon juice of 1
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste, freshly ground

Instructions

  1. Prepare the quinoa according to package instructions and set aside to cool.
  2. Arrange the mixed greens at the bottom of each bowl. Top with cooked quinoa.
  3. Distribute the falafel evenly among the bowls. Add cherry tomatoes, cucumber slices, and red onion.
  4. Add a dollop of hummus to each bowl. Drizzle tahini sauce over the top.
  5. Squeeze fresh lemon juice over each bowl and drizzle with olive oil. Season with salt and pepper to taste and serve.
