Ingredients

  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/2 red onion chopped
  • 1/2 cup fresh parsley chopped
  • 1/2 cup fresh cilantro chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper optional
  • 1/2 teaspoon salt
  • 1/4 cup chickpea flour
  • whole-wheat burger buns
  • lettuce tomato, cucumber slices for serving

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, red onion, parsley, cilantro, garlic, cumin, coriander, cayenne pepper, and salt. Pulse until mixture is coarsely ground.
  3. Transfer the mixture to a bowl, add chickpea flour, and mix until well combined. Form the mixture into 4 patties and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 15 minutes, then flip the patties and bake for an additional 15 minutes or until golden and firm.
  5. Serve the falafel burgers on whole-wheat buns with lettuce, tomato, and cucumber slices.
