Faloodeh

Faloodeh (or paloodeh) is a traditional Iranian frozen dessert made with lime rice noodles and rose water.

Ingredients

  • 4 oz. very thin rice noodles (or rice vermicelli)
  • 1 cup caster sugar
  • 3 cups water
  • ⅓ cup lime juice , freshly squeezed
  • 3 tablespoons rose water
  • ⅓ cup sour cherry syrup (or pomegranate molasses)
  • 3 oz. crushed pistachios
  • 4 tablespoons pomegranate seeds
  • lime wedge , with the skin

Instructions

  1. Cook the rice vermicelli according to the instructions on their package.
  2. Once the noodles are cooked, drain them and immediately place them in the refrigerator for 1 hour.
  3. Combine sugar and water in a saucepan over low heat, stirring occasionally until the sugar is completely dissolved.
  4. Let cool for 10 minutes, then add the lime juice, and rose water.
  5. Pour the sugar and water mixture into ice cube trays and place in the freezer. Let cool until freezing, at least 2 hours.
  6. Quickly crush the ice cubes in a blender until they are finely ground, like a coarse powder, without letting them melt.
  7. In an airtight container, combine the crushed ice and vermicelli and place the mixture in the freezer for about 15 minutes, or until the vermicelli are crisp, white and frozen.
  8. Gently break up if necessary, and divide into dessert cups.
  9. Pour the sour cherry syrup (or pomegranate molasses) over it, and garnish with crushed pistachios and pomegranate seeds.
  10. Garnish with lime wedges.

Notes

  • Optionally, add a scoop of vanilla, pistachio and / or honey ice cream at the bottom of the bowl, before serving. Toppings can also include fresh or canned cherries, sprigs of fresh mint, all of which are traditional.
