Faloodeh
Faloodeh (or paloodeh) is a traditional Iranian frozen dessert made with lime rice noodles and rose water.

Ingredients
- 4 oz. very thin rice noodles (or rice vermicelli)
- 1 cup caster sugar
- 3 cups water
- ⅓ cup lime juice , freshly squeezed
- 3 tablespoons rose water
- ⅓ cup sour cherry syrup (or pomegranate molasses)
- 3 oz. crushed pistachios
- 4 tablespoons pomegranate seeds
- lime wedge , with the skin

Instructions
- Cook the rice vermicelli according to the instructions on their package.
- Once the noodles are cooked, drain them and immediately place them in the refrigerator for 1 hour.
- Combine sugar and water in a saucepan over low heat, stirring occasionally until the sugar is completely dissolved.
- Let cool for 10 minutes, then add the lime juice, and rose water.
- Pour the sugar and water mixture into ice cube trays and place in the freezer. Let cool until freezing, at least 2 hours.
- Quickly crush the ice cubes in a blender until they are finely ground, like a coarse powder, without letting them melt.
- In an airtight container, combine the crushed ice and vermicelli and place the mixture in the freezer for about 15 minutes, or until the vermicelli are crisp, white and frozen.
- Gently break up if necessary, and divide into dessert cups.
- Pour the sour cherry syrup (or pomegranate molasses) over it, and garnish with crushed pistachios and pomegranate seeds.
- Garnish with lime wedges.

Notes
- Optionally, add a scoop of vanilla, pistachio and / or honey ice cream at the bottom of the bowl, before serving. Toppings can also include fresh or canned cherries, sprigs of fresh mint, all of which are traditional.
