Farmer's Market Feta Bruschetta
A fresh, delicious appetizer that's always a hit and is super adaptable. Use whatever veggies you've got in the fridge!
Ingredients
- 2 sweet corn husks and silk removed, cooked until just tender (see Café Tips above for cooking corn, ears, fresh
- 1 zucchini cut in ¼-inch dice, small
- 1 bell pepper cut in ¼-inch dice, medium
- 1 cup red onion cut in ¼-inch dice, diced
- 4 scallion green onions, thinly sliced, medium
- lemon fine zest from one
- 3 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- ¼ teaspoon salt sea salt
- 1 cup feta cheese diced or crumbled
- 3 tablespoons thyme fresh leaves
- black pepper freshly ground
Instructions
- Cut corn from husks. Transfer corn to a medium size bowl and discard husks.
- Combine zucchini, pepper, green onions and lemon zest in the bowl with the corn. Stir to combine.
- Drizzle with olive oil and stir well. Drizzle with lemon juice and sprinkle with sea salt. Stir again.
- Add Feta and thyme leaves, reserving 1 tablespoon of thyme for garnish. Stir gently.
- Transfer to a serving bowl and sprinkle with reserved thyme and freshly ground black pepper. Serve with crostini (see below) or pita chips.
