Farmer's Market Feta Bruschetta

Ingredients

  • 2 sweet corn husks and silk removed, cooked until just tender (see Café Tips above for cooking corn, ears, fresh
  • 1 zucchini cut in ¼-inch dice, small
  • 1 bell pepper cut in ¼-inch dice, medium
  • 1 cup red onion cut in ¼-inch dice, diced
  • 4 scallion green onions, thinly sliced, medium
  • lemon fine zest from one
  • 3 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • ¼ teaspoon salt sea salt
  • 1 cup feta cheese diced or crumbled
  • 3 tablespoons thyme fresh leaves
  • black pepper freshly ground

Instructions

  1. Cut corn from husks. Transfer corn to a medium size bowl and discard husks.
  2. Combine zucchini, pepper, green onions and lemon zest in the bowl with the corn. Stir to combine.
  3. Drizzle with olive oil and stir well. Drizzle with lemon juice and sprinkle with sea salt. Stir again.
  4. Add Feta and thyme leaves, reserving 1 tablespoon of thyme for garnish. Stir gently.
  5. Transfer to a serving bowl and sprinkle with reserved thyme and freshly ground black pepper. Serve with crostini (see below) or pita chips.
