Farro and Asparagus Bowls with Ground Beef

Ingredients
- 1 cup farro
- 1 bunch asparagus trimmed and cut into bite-sized pieces
- 1 tbsp olive oil
- 1 small onion diced
- 4-5 garlic cloves minced
- 1 lb ground beef
- 1 tsp ground cumin
- 1 tsp smoked paprika
- salt and pepper to taste
- 1 cup arugula
- ½ cup cherry tomatoes halved
- ¼ cup crumbled Feta cheese
- lemon juice and wedges
Instructions
- Cook the farro according to the package instructions. Once cooked, drain any excess water and set aside.
- Preheat oven to 425 degrees F. Place the asparagus on a baking sheet and drizzle with olive oil, season with salt and pepper to taste. Roast the asparagus in the preheated oven for about 12-15 minutes, or until tender and slightly charred.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent and fragrant. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through. Stir in the ground cumin, smoked paprika, salt, and pepper. Cook for another 1-2 minutes.
- Divide all ingredients into 4 serving bowls; drizzle over fresh lime juice and serve with fresh lime wedges. Serve immediately.
