Farro Caprese Salad
This hearty caprese grain salad is made with whole grain farro, tomatoes, basil and fresh mozzarella. Ideal for making ahead!
Ingredients
- 2 cups farro cooked, prepared according to package instructions, Bob’s Red Mill brand
- 8 ounces bocconcini (mini fresh mozzarella balls)
- 1 cup cherry tomato halved
- ⅓ cup basil thinly sliced, fresh
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- salt to taste
- black pepper to taste
Instructions
- Add all ingredients to a large bowl and toss well. Season with salt and pepper to taste. Can be served warm, room temp or chilled.
Notes
- Salad will keep in an air-tight refrigerated container for up to 5 days.
