This hearty caprese grain salad is made with whole grain farro, tomatoes, basil and fresh mozzarella. Ideal for making ahead!

Ingredients

  • 2 cups farro cooked, prepared according to package instructions, Bob’s Red Mill brand
  • 8 ounces bocconcini (mini fresh mozzarella balls)
  • 1 cup cherry tomato halved
  • ⅓ cup basil thinly sliced, fresh
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Add all ingredients to a large bowl and toss well. Season with salt and pepper to taste. Can be served warm, room temp or chilled.

Notes

  • Salad will keep in an air-tight refrigerated container for up to 5 days.
