Farro Salad With Lemon Vinaigrette

Ingredients

  • 7 oz arugula
  • 1 1/2 cups cooked farro
  • 1 cup feta
  • 1 large apple sliced
  • 1/3 cup cranberries
Farro Salad Dressing
  • 3 tbsp oil olive or avocado
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp ground black pepper

Instructions

  1. Start by placing the arugula on the bottom of a large bowl. Top it off with the cooked farro.
  2. Add on the apple slices, feta cheese, and cranberries.
  3. In a small jar with a lid, combine the oil, dijon mustard, lemon juice, salt, and pepper. Seal the lid and shake to combine.
  4. Drizzle the dressing all over the salad. Serve and enjoy.
