Fasolada

Fasoláda is a traditional Greek and Cypriot soup with white beans, olive oil and vegetables.

Ingredients

  • 2 cups White beans dried
  • 2 cloves garlic , crushed
  • 3 scallions , finely diced
  • 3 carrot sliced
  • 1 celery with leaves), chopped, stalk
  • 3 tomatoes seeded and chopped, ripe
  • 1 bay leaf
  • 6 tablespoons olive oil virgin
  • salt
  • black pepper
  • 2 tablespoons tomato paste
  • 10 cups water boiling
  • ½ bunch parsley , finely chopped
  • lemon juice of 1

Instructions

  1. Soak the beans in a large amount of cold water for 12 hours at room temperature.
  2. Rinse and boil in plenty of water for 15 minutes in a covered large pot.
  3. Drain and discard the water.
  4. Heat the olive oil in a large cast-iron or Dutch oven.
  5. Sweat the onions and garlic over low heat then add all other ingredients and cover with boiling water.
  6. Add salt and pepper.
  7. Bring back to boil and cook on high for 5 minutes.
  8. Then lower the heat to medium/low and simmer, covered, for 2 hours.
  9. Add boiling water while cooking, if necessary.
  10. Check the tenderness of the beans. Increase the cooking time if necessary.
  11. Serve hot with lemon juice and parsley.
  12. Drizzle a little olive oil before eating (optional).
