Ingredients
- 2 cups White beans dried
- 2 cloves garlic , crushed
- 3 scallions , finely diced
- 3 carrot sliced
- 1 celery with leaves), chopped, stalk
- 3 tomatoes seeded and chopped, ripe
- 1 bay leaf
- 6 tablespoons olive oil virgin
- salt
- black pepper
- 2 tablespoons tomato paste
- 10 cups water boiling
- ½ bunch parsley , finely chopped
- lemon juice of 1
Equipment
- Dutch oven
Instructions
- Soak the beans in a large amount of cold water for 12 hours at room temperature.
- Rinse and boil in plenty of water for 15 minutes in a covered large pot.
- Drain and discard the water.
- Heat the olive oil in a large cast-iron or Dutch oven.
- Sweat the onions and garlic over low heat then add all other ingredients and cover with boiling water.
- Add salt and pepper.
- Bring back to boil and cook on high for 5 minutes.
- Then lower the heat to medium/low and simmer, covered, for 2 hours.
- Add boiling water while cooking, if necessary.
- Check the tenderness of the beans. Increase the cooking time if necessary.
- Serve hot with lemon juice and parsley.
- Drizzle a little olive oil before eating (optional).
