Ingredients

  • 1 tablespoon avocado oil or oil of choice
  • 1/2 cup brown rice
  • 1 yellow onion diced, large
  • 2 celery chopped, stalks
  • 1 carrot peeled and chopped
  • 6 cloves garlic minced
  • 1 fennel bulb chopped, large
  • ½ teaspoon fennel seeds
  • ¼ teaspoon rosemary
  • ½ teaspoon Turmeric
  • 1 teaspoon herbes de provence or Italian seasoning
  • 1 teaspoon salt or to taste. Adjust amount of salt according to how salty your broth is
  • 8 cups chicken broth or vegetable broth

Instructions

  1. Add the chicken/vegetable broth and bring to a full boil.
  2. Cover the pot, reduce heat to medium low and simmer for 40 minutes.
  3. The soup is ready when the veggies are soft but still al dente. If you prefer very soft veggies, cook longer at a higher temperature.
