Festive Asian Style Ham and Rice Salad
This Asian ham and rice salad with persimmon and pomegranate makes a great side dish for festive table on holidays. It's easy and delicious.

Ingredients
- 1 lb Hatfield's uncured ham cubed
- 2 cup Steamed rice
- 3 green onions chopped
- 2 persimmon peeled, cored, and chopped
- 1 pomegranate seeded
- 1 red chili seeded and minced (optional)
- 3 tablespoon roasted sunflower seeds
For the dressing:
- 3 tablespoon pineapple juice
- 1 tablespoon lemon juice
- 1 tablespoon rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon dried minced onion
- 1 tablespoon toasted sesame seeds
- 2 pinch salt
Instructions
- To make dressing, whisk all the dressing ingredients in a jar.
- In a large bowl, combine ham, rice, green onion, fruits, and red chili (if using). Drizzle with dressing and toss together. Sprinkle with toasted pecans or sunflower seeds on top. Serve immediately or chill for 1-2 hours.
