Feta Cheese puff pastries with leeks & dill

These pastries can be a great appetizer that are gone within minutes an easy weeknight dinner.

Ingredients

  • 3 heets puff pastry thawed
  • 1.7 lbs feta cheese
  • 2 leeks halved and sliced, whites and light green parts only
  • 2 eggs
  • 1 handful dill roughly chopped
  • 4 tablespoons extra virgin olive oil
  • 1 egg beaten for the egg wash

Instructions

  1. Preheat the oven to 375 F. Line a baking sheet with parchment paper. 
  2. In a skillet heat 1 tbs olive oil. Add the leeks and saute for 1-2 min, until they are fragrant and soft. Make sure they don't get any color. Remove from heat and set aside.
  3. In a large bowl add the feta, eggs dill, freshly ground pepper and 3 tbs olive oil. With a fork press down and break feta and mix everything together well.
  4. Add the leeks to the cheese mixture. Gently mix everything well together.
  5. Lay the pastry sheets flat on a clean, floured surface. Gently roll the sheets out to stretch slightly. Cut each sheet into 16 squares.
  6. In each sheet, layer 1 tbsp of the cheese filling on 8 of the squares, leaving a 1/4 inch border around the edges. Lay the remaining 8 squares over the filling and seal the edges by crimping with the back of a fork. 
  7. Place the squares on the prepared baking sheet and brush the tops with beaten egg. Sprinkle with sesame all over. Transfer to the oven and bake for 20-25 minutes or until golden brown.
