Feta Dip Phyllo Cups

These Feta Dip Phyllo Cups are bite-sized appetizers featuring crispy phyllo shells filled with a fresh, tangy mixture of diced Roma tomatoes, crumbled feta, green onions, olive oil, lemon juice, and seasonings. The combination offers a balance of creamy, salty feta and bright tomato flavors inside a crunchy cup, ideal for casual gatherings or light snacks.

Ingredients

  • 15 phyllo shells (one package)
  • ½ cup tomato I used Roma tomatoes, finely diced
  • ⅓ cup feta cheese crumbled
  • 3 TBSP green onion sliced or scallions
  • 1.5 TBSP extra virgin olive oil
  • lemon juice to taste, a squeeze
  • ⅛ tsp basil dried
  • ⅛ tsp garlic powder
  • salt pinch
  • black pepper pinch

Instructions

  1. For a bit of extra crispness, preheat oven to 350°F and lightly toast phyllo shells for 5-6 minutes or until edges are golden. This step is optional but adds extra crunch!
  2. Finely dice your tomato. I like to use Roma or plum tomatoes for these but other varieties will work as long as they're ripe. If using a block of feta, crumble and measure out 1/3 cup. Slice green onions with a chef's knife or with kitchen scissors.
  3. Combine tomatoes, feta, and green onion with olive oil and a squeeze of fresh lemon juice. Season with dried basil, garlic powder, salt, and pepper. Mix well and adjust ingreidents to taste.
  4. Spoon into lightly toasted phyllo shells and enjoy! I use a 1/2 TBSP measuring spoon to add a heaping spoonful to each phyllo cup.

Notes

  • To add extra creaminess, consider placing a small dollop of whipped cream cheese at the base before spooning in the feta dip.
  • This recipe can be doubled or tripled to serve larger gatherings.
  • For a larger party, try Mediterranean Feta Dip with chopped seedless cucumber as an alternative or additional option.
