Ingredients

  • 1 egg large
  • 1/4 cup feta cheese crumbled
  • 1/4 teaspoon oregano dried
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • 1 lice whole grain bread toasted
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat and add the crumbled feta cheese, forming a circle with an empty center for the egg.
  2. Once the feta begins to sizzle and brown, gently crack the egg into the center of the feta circle, being careful not to break the yolk.
  3. Sprinkle the egg with dried oregano, red pepper flakes, salt, and pepper. Cook to your desired doneness, allowing the feta to crisp up and form a golden crust.
  4. Carefully slide the fried egg and feta onto the toasted bread and serve immediately.
