Filipino Menudo

Ingredients

  • 2 pounds pork shoulder, cut into ½-inch cubes
  • ¼ cup soy sauce
  • 2 tablespoons calamansi juice
  • ½ teaspoon pepper
  • oil
  • 3 medium potatoes, peeled and cut into ½-inch cubes
  • 2 large carrots, peeled and cut into ½-inch cubes
  • 1 medium red bell pepper, seeded, cored, and cut into cubes
  • 1 medium green bell pepper, seeded, cored, and cut into cubes
  • 3 hot dogs, sliced diagonally
  • ½ pound chicken liver, cut into 1-inch cubes
  • 1 onion, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 1 tablespoon tomato paste
  • 1 cup tomato sauce
  • 1 ½ cups water
  • 1 cup garbanzo beans, drained
  • 1 cup frozen green peas, thawed
  • ¼ cup raisins
  • 1 packet (8 grams) Maggi Magic Sarap seasoning

Instructions

  1. In a bowl, combine pork, soy sauce, calamansi/lemon juice, and pepper. Marinate for 10 to 15 minutes.
  2. In a large pan, heat about ¼ cup oil. Add potatoes and carrots and cook until lightly browned. Remove from the pan and set aside.
  3. Remove excess oil except for about two tablespoons. Add bell peppers and cook on high heat for about 30 to 40 seconds. Remove from the pan and drain on paper towels.
  4. Add hotdogs and cook until lightly browned. Remove and set aside.
  5. Add more oil to the pan as needed Sear the liver just until lightly browned. Remove and set aside.
  6. In the same pan, add oil as needed. Add onions and garlic and cook until softened.
  7. Drain the marinated pork well, reserving marinade. Add to the pan and cook until lightly browned. 
  8. Add tomato paste and cook for about 1 minute, stirring until evenly distributed. 
  9. Add the reserved marinade, tomato sauce, and water. Stir to distribute and bring to a boil, skimming scum that floats on top. Lower heat, cover, and simmer for about 35 to 45 minutes or until the pork is tender and sauce is slightly reduced. 
  10. Add potatoes, carrots, hotdogs, garbanzos, raisins, and green peas. Continue to cook until potatoes and carrots are tender.
  11. Add liver and let stand for a few seconds before stirring. Continue to simmer until cooked through.
  12. Add bell peppers. Season with Maggi magic sarap.
  13. Continue to cook until the sauce is reduced and slightly thickened.

Notes

  • Sear the liver just until lightly browned as it will continue to cook when added to the stew. Overcooking will make it tough and dry.
