Filipino-Style Chicken Adobo Recipe

Considered to be the national dish of the Philippines, this delicious chicken is lightly browned and then cooked in a tart and savory sauce. Serve it on a bed of white rice with a crisp green veggie for a delicious take on comfort food.

Ingredients

  • 4 chicken legs bone-in, skin-on
  • 8 cloves garlic crushed
  • 1 cup soy sauce
  • 1 cup rice vinegar
  • 1 cup water more if needed
  • 1 tablespoon canola oil
  • 1 teaspoon black peppercorns
  • 2 bay leaves fresh, or 3 dried
  • salt to taste
  • white rice cooked for serving.

Instructions

  1. In a Dutch oven over medium heat, heat the canola oil.
  2. Add the chicken pieces in a single layer, with the skin side down. Cook until well browned, 3 to 4 minutes on each side, before removing them and setting aside.
  3. Into the same pot, add the garlic, black pepper corns and bay leaves and cook until golden brown and fragrant.
  4. Add water, soy sauce, vinegar and stir to mix well.
  5. Return the chicken to the pot, turn the heat up to high, and bring it to a boil. Turn the heat down to low, and simmer for 20 minutes until chicken is tender and cooked through.
  6. Serve immediately, or refrigerate and serve one day later. Enjoy!
