Financier, or visitandine, is a small traditional French almond cake, flavored with brown butter, that’s baked in a small rectangular pan.

- 1¼ cup ground almonds
- ½ cup butter unsalted
- ¼ cup flour
- 1 cup icing sugar
- 4 egg at room temperature, white
- ½ teaspoon bitter almond extract (or the seeds of 1 vanilla pod)

Instructions
- In a large bowl, sift together the flour, ground almonds and icing sugar. Set aside.
- Preheat the oven to 400 F (200°C).

Brown butter
- Melt the butter over low heat in a non-stick saucepan, and separate the fat from the solid milk residue which sinks to the bottom of the saucepan and begins to brown.
- When it turns a toasted hazelnut color, remove the saucepan from the heat. Set aside.
- The butter will smell slightly of hazelnut.
Financiers
- While gently mixing with a spatula or a whisk, stir the egg whites into the dry ingredients.
- Add the bitter almond extract or the seeds of the vanilla pod.
- Finally, add the brown butter and mix gently with a spatula until a smooth and homogeneous paste is obtained.
- Fill the financier pans three-quarters full.
- Bake for 10 minutes for small financiers, or 14 to 15 minutes for large ones.
- Turn out onto a cooling rack.
