Ingredients

Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 (8-ounce) tomato sauce canned
  • 1 (6-ounce) tomato paste canned
  • 1 (28-ounce) tomato whole, canned
  • 2 (14-ounce) diced tomatoes fire-roasted, canned
  • 2 cups water
  • 2 cups chicken broth
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 1½ cups heavy cream
  • ¼ cup Parmesan Cheese grated

Instructions

  1. In a large pot, add the olive oil and onion and saute until translucent. Add the garlic and continue to cook for a few more minutes.
  2. Add the diced tomatoes, tomato sauce, tomato paste, water, and chicken broth.  Bring the mixture to a boil, then cover and simmer for about 30 minutes.
  3. Pour the soup mixture into a blender or food processor. Puree the mixture until it reaches your desired consistency.
  4. Pour the blended soup back into the pot. Add the heavy cream, parmesan cheese, salt and pepper. Stir and simmer the soup for another 5 minutes and serve!
