Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (8-ounce) can tomato sauce
- 1 (6-ounce) can tomato paste
- 1 (28-ounce) can whole tomatoes
- 2 (14-ounce) cans of fire-roasted diced tomatoes
- 2 cups water
- 2 cups chicken broth
- 2 teaspoons salt
- ½ teaspoon pepper
- 1½ cups heavy cream
- ¼ cup grated Parmesan cheese
Instructions
- In a large pot, add the olive oil and onion and saute until translucent. Add the garlic and continue to cook for a few more minutes.
- Add the diced tomatoes, tomato sauce, tomato paste, water, and chicken broth. Bring the mixture to a boil, then cover and simmer for about 30 minutes.
- Pour the soup mixture into a blender or food processor. Puree the mixture until it reaches your desired consistency.
- Pour the blended soup back into the pot. Add the heavy cream, parmesan cheese, salt and pepper. Stir and simmer the soup for another 5 minutes and serve!
