Ingredients

  • 1 pound large shrimp peeled and deveined
  • salt and pepper to taste
  • 1/2 cup cornstarch
  • 2 large eggs beaten
  • 1/4 cup vegetable oil for frying
  • 1/2 cup Sweet chili sauce
  • 1 tablespoon honey
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon Sriracha sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Season the shrimp with salt and pepper. Dredge each shrimp in cornstarch, then dip them into the beaten eggs.
  2. Fry the shrimp in hot vegetable oil until golden brown, then drain on paper towels.
  3. Combine sweet chili sauce, honey, lemon juice, lemon zest, sriracha, and garlic powder in a saucepan and warm on the stove over medium heat until everything is well-mixed. Remove from heat.
  4. Toss the fried shrimp in the sauce until evenly coated. Serve immediately.
