Firi Firi

Firi firi is a coconut-based donut. It is a Polynesian specialty served at traditional breakfast, especially in Tahiti.

Ingredients

  • 2½ cups flour
  • ¼ cup caster sugar
  • 1 tablespoon active dry yeast
  • ½ cup coconut milk
  • ½ cup coconut water (at 85 F)
  • ½ vanilla pod , split lengthwise and scraped
  • vegetable oil (for frying)
  • icing sugar (to sprinkle)
  • 2 tablespoons flour (to sprinkle)

Instructions

  1. Pour and dissolve the yeast in the coconut water.
  2. In the bowl of a stand mixer, add the flour, sugar, coconut milk, yeast dissolved in the coconut water, vanilla seeds and knead until obtaining a smooth and homogeneous dough.
  3. Cover the bowl with a cloth and let the dough rise at room temperature for 2 hours.
  4. Then, sprinkle some flour over it to prevent it from sticking.
  5. Separate the dough into 10 pieces and form balls. Sprinkle a little flour while work the dough until it does not stick to the fingers.
  6. Roll these balls into small sausages and form the shape of an 8, characteristic of these donuts.
  7. Let the donuts rise again on a floured work surface at room temperature for 30 minutes.
  8. In a frying pan, heat a large amount of vegetable oil at 350 F / 170 C and fry the firi firi on both sides until golden brown.
  9. Remove the firi firi from the pan with a skimmer and place on paper towels.
  10. Sprinkle the firi firi with icing sugar.
  11. Enjoy them hot.
