Ingredients

  • 4 White fish fillets 6-ounce, examples: cod, halibut, or snapper
  • 1/4 cup extra virgin olive oil
  • 1 lemon thinly sliced
  • 4 garlic minced, cloves
  • 1 tablespoon dill chopped, fresh
  • 1 tablespoon parsley chopped, fresh
  • 1 red onion thinly sliced, small
  • 8 cherry tomato quartered
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Cut parchment paper into four large squares, enough to wrap each fillet generously.
  3. Place a fish fillet in the center of each parchment square. Season with salt and pepper.
  4. Drizzle each fillet with olive oil, then top with lemon slices, minced garlic, dill, parsley, red onion slices, and cherry tomatoes.
  5. Fold the parchment paper over the fish and vegetables, crimping the edges to seal the packets.
  6. Bake the packets on a baking sheet for 15 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Carefully open the packets to release the steam before serving.
