Fish Sticks

Ingredients

  • nonstick cooking spray
  • 1 pound cod fillets cut into 1-inch strips
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs

  1. Preheat oven to 425°F and place a wire rack over a baking sheet. Lightly coat the rack with nonstick cooking spray.
  2. Season the cod strips with salt and pepper.
  3. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Dredge each cod strip in flour, dip it into the egg, and coat it with panko breadcrumbs, pressing gently to adhere.
  5. Arrange the breaded fish strips on the prepared wire rack and spray the tops with nonstick cooking spray.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish sticks are golden brown and cooked through.
