Fish Tacos with Cucumber Salsa

These delicious fish tacos and cucumber salsa are an amazing combination of flavors!

Ingredients

Fried Fish
  • 4-5 tilapia fillets
  • ¾ cup whole wheat flour
  • ¼ cup Parmesan Cheese grated
  • 2 tsp salt
  • 1 cup beer
  • olive oil
  • 1 tbsp butter
Cucumber Salsa
  • 2 cups English cucumber peeled and diced
  • ½ cup tomato seeded and diced
  • ¼ cup red onion peeled and diced
  • 2 tablespoons parsley finely chopped, fresh
  • 1 jalapeno pepper seeded and chopped
  • 4 ½ teaspoons cilantro finely chopped, fresh
  • 1 garlic minced, clove
  • ¼ cup sour cream reduced-fat
  • 1 ½ teaspoons lemon juice
  • 1 ½ teaspoons lime juice
  • ¼ teaspoon cumin ground
  • ¼ teaspoon seasoned salt
Tacos
  • corn tortillas
  • Mexican cheese blend shredded, 4-cheese blend

Instructions

Cucumber Salsa
    Cup of Yum
  1. In a small bowl, combine cucumber, tomato, red onion, parsley, jalapeno pepper, cilantro, and garlic
  2. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt
  3. Pour over cucumber mixture and toss gently to coat
Fried Fish
  1. Mix the whole wheat flour, parmesan cheese, and salt
  2. Stir in the cup of beer
  3. Cut tilapia fillets into strips
  4. Heat 1 inch oil and butter in a 10-inch heavy pot (2 to 3 inches deep) over medium heat
  5. Dip each tilapia strip in the batter and cover the entire strip
  6. Take the strips out and let excess batter drip off
  7. Fry fish in batches, turning once or twice, until golden, 4 to 5 minutes
  8. Drain on paper towels
  9. Refry the fish
  10. Turn the heat up a little higher and refry the fish in batches, turning once or twice, until golden brown and crisp, about 1 minute
  11. Drain on paper towel
Assembly
  1. Stack 2 corn tortillas, put some cucumber salsa, shredded cheese, and tilapia inside
  2. Enjoy
