Flødekartofler

Flødekartofler is a traditional Danish dish of scalloped potatoes that is often served as a side dish as part of the classic Danish Christmas dinner.

Ingredients

  • 2 lbs large potatoes
  • 1 large egg , beaten
  • 1 clove garlic , crushed
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • 1 pinch grated nutmeg
  • 1 teaspoon fresh thyme , finely chopped
  • 2 cups heavy cream
  • 1 large onion , finely chopped (or 1 large leek, finely sliced)
  • 1 teaspoon butter (to grease the pie dish)
Optional topping
  • 4 oz. cheese (ideally Samsø, or Emmental or Gouda)
Equipment
  • Pie dish (11 in / 28 cm round)
  • Mandoline

Instructions

  1. Grease the pie dish with the butter, and preheat the oven to 375 F (190°C).
  2. Wash and dry the potatoes, then slice very thinly, ideally with a mandoline. Place into a bowl of cold water to stop them discoloring.
  3. Whisk the egg and cream together, and season with crushed garlic, salt, pepper, nutmeg, and thyme.
  4. Layer the potatoes and onions in the pie dish, then pour the cream mixture over the top.
  5. Sprinkle over some grated cheese, if using.
  6. Bake in the center of the oven for around an hour, until the potatoes are soft.
  7. Increase the heat to 400 F (200°C), remove the foil, and bake for a further 10 minutes, until the surface is golden brown.
