Fluffy Crispy Waffles

These easy waffles have a crispy exterior while they are fluffy inside, perfect for a quick and delicious breakfast!

Ingredients

  • 2 cups flour
  • 2 eggs
  • 1 ½ cups buttermilk
  • ½ cup melted butter
  • ½ teaspoon vanilla
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • ½ teaspoon finely ground salt

  1. Grease the waffle iron (if required), before preheating.
  2. In a large mixing bowl, beat together the eggs, then add the buttermilk, butter and vanilla and mix well.
  3. In a separate bowl, combine the dry ingredients and then sift these into the egg mixture. Stir till fully incorporated. (If the mixture seems a bit dry, add a bit of milk.)
  4. Spoon the batter into the waffle iron and cook according to manufacturer's instructions, till crisp and golden. Serve warm.

Notes

  • Always start with a preheated waffle iron.
  • I used a 7-inch regular waffle iron to make 6 waffles. However, if your waffle iron makes extra thick waffles, this recipe will make 4.
  • They are best served warm
