Fonio Porridge

The fonio porridge is a traditional West African pudding, made from the fonio cereal, which is nutritious and gluten-free.

Ingredients

  • 1 cup dry fonio
  • 4 cups water
  • ½ teaspoon salt
  • 2 cups milk
  • 4 tablespoons sugar
For the decor
  • 4 tablespoons raisins
  • 2 tablespoons peanuts
  • 2 tablespoons liquid honey

Instructions

  1. Wash the fonio by placing it in a large bowl and covering it with water.
  2. Stir it with the fingers, then drain it.
  3. Repeat this process until the water runs clear. Drain well.
  4. Add the fonio into a large saucepan with 4 cups (1 liter) of water and salt.
  5. Bring to a boil, then reduce the heat to low and simmer for 10 minutes, stirring constantly, until the fonio has absorbed all the liquid.
  6. Stir in the milk and continue to cook over low heat, stirring occasionally, for another 20 to 25 minutes, until obtaining a thick, creamy porridge.
  7. Remove from the heat, add the sugar and stir well.
  8. Garnish with raisins, peanuts and a drizzle of honey, then serve immediately.

Notes

  • This porridge solidifies as it cools, so do not let it sit for long.
