Fontainebleau

Fontainebleau is a combination of faisselle (a curd-like soft white cheese) and whipped cream, and is a traditional French dessert that’s served plain or with berry fruits.

Ingredients

  • 2¾ cups faisselle cheese (40% fat)
  • 2½ cups heavy cream (very cold)
  • ½ cups caster sugar
  • 1 teaspoon vanilla extract (optional)
  • 10 oz blueberries
Equipment
  • 1 cheesecloth fine mesh
  • Colander
  • parchment paper
  • 8 cheesecloth squares
  • Stand mixer

Instructions

  1. Place the bowl and the whisk attachment that will be used to whip the cream into the refrigerator for 3 hours.
  2. Rinse the cheesecloth with clean water, and use it to line a colander. Place the colander over a bowl.
  3. Place the faisselle cheese in the cheesecloth, and let it drain for 2 hours in a cool place.
  4. Spread the blueberries on a sheet of parchment paper, and place them in the freezer for 30 minutes.
  5. Whip the cold heavy cream until it's thickened.
  6. While continuing to whisk, add the caster sugar and vanilla extract at the end.
  7. Gently fold the whipped cream into the drained faisselle cheese, lifting the mixture with a spatula.
  8. Divide the fontainebleau into glasses or verrines lined with a small square of cheesecloth.
  9. Place a few frosted blueberries on top, then serve.

Notes

  • The following ingredients can be substituted for faisselle cheese:
  • Fontainebleau can be eaten plain, or with other fruits such as strawberries, raspberries, currants, or blackcurrants.
  • equal parts of cottage (farmers) cheese (or extra-light cream cheese) blended with plain yoghurt until smooth
  • a thick, unsweetened Greek yogurt
  • cottage cheese with a little trim milk, whipped in a food processor until smooth
