French Apple Cake

French Apple Cake combines caramelized chopped apples cooked in butter and sugar with a light, fluffy cake batter. The result is a moist, tender cake with warm caramel apple flavor throughout. Topped with softly whipped cream sweetened with powdered sugar, it offers a rich yet balanced dessert featuring familiar autumnal ingredients and gentle sweetness.

Ingredients

Caramelized Apples:
  • 1/2 cup butter
  • 1 1/2 lbs (about 4) apple peeled, cored, and chopped into small bite-size pieces
  • 2 Tablespoons sugar
Cake Batter:
  • 2 large egg
  • 3/4 cup sugar
  • 1 Tablespoon vanilla
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Whipped Cream:
  • 1 1/2 cups heavy cream
  • 1/3 cup powdered sugar

  1. In a large saucepan, melt butter over medium heat.  Add sugar and stir with a wooden spoon.  Add chopped apples and cook for about 10 minutes, stirring often, until apples are softened. Set aside to cool. 
  2. Preheat oven to 350 degrees. In a large mixing bowl, cream together eggs, sugar and vanilla until light and fluffy.  Add browned butter apple mixture. Fold in flour, baking powder, and salt. 
  3. Spray springform pan or 9-inch cake pan with non-stick cooking spray. Pour batter into pan. Bake for 30-38 minutes or until a light golden brown color forms on the top and the cake is done in the middle. *The top can become a little brown so may want to cover with foil the last 10 minutes of baking.* Set aside to cool.
  4. To make whipped cream: whip heavy cream until soft peaks form. Add powdered sugar and whip for 30 seconds longer. 
  5. Remove cake from springform pan.  If using a cake pan, carefully invert the cake onto a cooling rack, and gently flip the cake over and place right-side-up on a serving platter. Dust with powdered sugar. Cut into slices and serve with a generous dollop of whipped cream. 

Notes

  • Use baking apples such as Granny Smith, Fuji, or Gala for best texture and flavor in the caramelized apple mixture.
