French Carrot Salad

This classic French carrot salad is a fresh, 2 ingredient salad tossed with lemon Dijon dressing. A versatile side you'll make all season!

Ingredients

  • 1 lb carrot peeled and shredded
  • 1/2 cup parsley lightly packed, chopped, fresh
Dressing
  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice fresh
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp cumin ground
  • 1 pinch salt more/less, to taste

Instructions

    Cup of Yum
  1. Add the shredded carrots and parsley to a mixing bowl and toss together.
  2. Whisk together all the dressing ingredients, and taste to adjust if needed.
  3. Add the dressing to the carrots and toss everything together gently to combine. Garnish with more fresh parsley if desired. Serve asap.

Notes

  • This salad is best served as soon as possible after making. If you'd like to prep ahead, you can grate the carrots and keep them in a plastic zip-loc bag in the fridge for up to a day until ready to dress and serve.
