French Carrot Salad
This classic French carrot salad is a fresh, 2 ingredient salad tossed with lemon Dijon dressing. A versatile side you'll make all season!

- 1 lb carrots peeled and shredded
- 1/2 cup chopped fresh parsley lightly packed
Dressing
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/4 tsp ground cumin
- 1 pinch salt more/less, to taste
Instructions
- Add the shredded carrots and parsley to a mixing bowl and toss together.
- Whisk together all the dressing ingredients, and taste to adjust if needed.
- Add the dressing to the carrots and toss everything together gently to combine. Garnish with more fresh parsley if desired. Serve asap.

Notes
- This salad is best served as soon as possible after making. If you'd like to prep ahead, you can grate the carrots and keep them in a plastic zip-loc bag in the fridge for up to a day until ready to dress and serve.
