French Onion Chicken Bake

Ingredients

  • 1 lb (500g) chicken breasts
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp butter
  • 6 medium onions thinly sliced
  • 4 garlic cloves sliced
  • 2 tbsp balsamic vinegar
  • 3 prigs fresh thyme
  • 1 tsp flour
  • 1 cup beef broth / beef stock
  • 1 cup gruyere cheese shredded/grated

Instructions

  1. Preheat the oven to 400°F/200°C.
  2. Prepare the chicken by flattening the chicken in between two sheets of parchment paper with a rolling pin.
  3. Drizzle with olive oil then season generously with salt and pepper on both sides.
  4. In a deep braiser or skillet set over medium-high heat, sear the chicken on both sides until golden brown.
  5. Remove from the pan and set aside.
  6. Melt the butter in the same pan then add the slices onions.
  7. Allow to cook down for 10 minute or until the onions are soft and caramelized.
  8. Add the garlic, thyme and balsamic vinegar and cook for another minute.
  9. Add the flour and stir in the pour in the beef broth.
  10. Allow to come to a simmer then add the chicken breasts back into the pan.
  11. Spoon the caramelized onions over the chicken breasts then add the gruyere cheese.
  12. Bake the chicken in a hot oven until the sauce is bubbling and the cheese has melted.
  13. Remove from the oven then serve.
