French Toast Casserole

Quick and easy baked French Toast Casserole is the perfect overnight breakfast or brunch recipe!

Ingredients

French Toast
  • 1 loaf sourdough or French bread tore into pieces
  • 8 eggs
  • 2 1/2 c. milk
  • 1/2 c. heavy whipping cream
  • 2 c. Golden Butter Yellow cake mix
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
Topping
  • 1/2 c. all-purpose flour
  • 1/2 c. brown sugar firmly packed
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 c. butter softened

Instructions

  1. Spray a 9x13" glass baking dish with non-stick spray.
  2. Layer pieces of bread in baking dish.
  3. Whisk together eggs, milk, heaving whipping cream, cake mix, cinnamon and vanilla extract in a large bowl. Pour mixture over bread.
  4. Cover baking dish and store in the fridge overnight or for several hours.
  5. In a small bowl add flour, brown sugar, cinnamon and salt, stir until combined. Mix in I Can't Believe It's Not Butter! to mixture. Store in fridge overnight and several hours.
  6. Preheat oven to 350 degrees.
  7. Remove french toast casserole from fridge, uncover and drop topping by the spoonful randomly across french toast casserole.
  8. Bake for 1 hour until the center is set and edges are browned.
  9. Serve with butter, whipped cream, berries or maple syrup

Notes

  • Add-In Ideas!
  • The best bread to use for French Toast is sourdough, challah, brioche and French bread. For this recipe I like sourdough. It holds up nicely and bakes perfectly delicious!
  • Prepare this casserole the night before you want to enjoy it because it gives the bread time to soak up the egg mixture. You'll want to let it soak at least 3-4 hours. 
  • If it comes out soggy, the bread you used might not have been hearty enough to soak up the egg mixture. Try using a more hearty bread next time or reducing the amount of milk.
  • Topping ideas including whipped cream, fresh berries, maple syrup and butter.
  • To reheat leftovers, cover the dish with tin foil and tuck it back into the oven for about 30 minutes or until it's hot - you'll know when it's done because you can smell the deliciousness! It will be best to reheat it in the oven, though you can certainly pop it in the microwave in a pinch.
  • Use a cinnamon swirl bread instead of sourdough.
  • Add in bacon for a savory combination
  • Chopped pecans make a delicious crunch in this casserole either in the topping or right in the batter. 
  • For a boozy twist mix in a few tablespoons of Amaretto or rum to the egg mixture.
