French Toast Waffle
Delicious French toast waffle, the perfect breakfast ever!

Ingredients
- 1 loaf bread brioche or challah. Cut into 1 1/2 inch slices
- 1 cup fresh strawberries cut small
- 1 cup fresh blueberries cut small
- 1 1/2 cup milk
- 4 eggs
- 1/3 cup brown sugar
- 1/3 cup white sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 3 tbsps unsalted butter
- mint and powdered sugar for garnishing (optional)
Instructions
- In a hot large skillet on medium high heat, melt the butter. Then, add the berries and mix. Finally, and sugar and mix all of your ingredients for 2-3 minutes.
- Bring the mixture to a boil, and then reduce the heat to low and stir slowly for another minute. Remove. (Your fruit should still have a bite! Don't cook too long!)
- In a large bowl, whisk eggs, milk, vanilla and cinnamon. Dip your bread slices into your milk/egg mixture and place on a hot, oiled waffle iron. Cook until finished.
- Serve your waffles hot. Pour fruit compote over your waffles. Garnish with mint and powdered sugar.
